8 oz. can pineapple rings
2 sweet potatoes
16 oz. bag marshmallows
1 cup milk
1. Preheat oven to 350 degrees.
2. Bring a large pot of salted water to a boil. Add potatoes and cook until tender, 20 to 30 minutes. With an electric mixer on low, blend potatoes, slowly adding milk, about 1/2 a cup at a time. (Use more or less to achieve desired texture). Add butter and maple syrup to taste. Blend until smooth.
3. Place pineapple rings on a baking sheet and cover the tops with mashed sweet potato mixture. Top with marshmallows and sprinkle with cinnamon.
4. Bake approximately 10-12 minutes until marshmallows are brown on top.
